SQUASH FRITTERS 
2 c. raw summer squash, grated
1/4 c. finely chopped onion
Pepper to taste
2 tsp. sugar
1/2 tsp. salt
6 tbsp. flour
2 eggs, beaten
1 tbsp. melted butter

1. Combine first six ingredients.

2. Stir eggs into squash mixture.

3. Add butter.

4. Drop fritter batter by tablespoon onto greased griddle or skillet.

5. Cook until delicate brown; turn and brown on other side.

6. Serve immediately. Serves 6.
