SQUASH FRITTERS 
2 c. squash cooked, drained, and mashed
2 eggs
1 c. flour
2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
Dash pepper

Beat eggs; add squash, flour, and seasonings. Beat until smooth. Add baking powder and mix well. Spoon into hot fat; drain and serve.
