SQUASH FRITTERS 
2 c. yellow squash (cooked and mashed)
2 eggs (beaten)
1 sm. onion (chopped)
1/2 c. cracker crumbs
Salt (to taste)
Pepper (to taste)
Hot vegetable oil

Combine squash, eggs, onion seasonings and cracker crumbs. Mix well. Drop mixture by tablespoon into hot oil. Cook until golden brown, turning once.
