RALPH'S SQUASH FRITTERS 
1 egg
1 c. milk
1 c. flour
1 c. corn meal
2 tbsp. cooking oil
1 tbsp. baking powder
1 tsp. seasoning salt
1/2 tsp. garlic salt
4 sm. or 2 med. yellow squash

Beat egg and milk in large bowl. Add flour and corn meal. Mix. Add oil and mix. If too thick add more milk a little at a time. Add baking powder and salt. Shred the squash using coarse grater and blend with batter. Cook as you would pancakes on a lightly greased pan.

Pretty good. Easily modified with gluten free corn meal and all purpose flour and they come out perfect!
