SQUASH FRITTERS 
2 c. grated raw summer squash
Dash of pepper
1 tsp. salt
2 eggs
1/4 tsp. grated onion
2 tsp. sugar
6 tbsp. all-purpose flour
2 tsp. melted butter

Combine squash, onion, pepper, sugar, salt and flour. Beat eggs and add to squash. Add butter. Drop by tablespoonfuls onto oiled frying pan. Cook until lightly browned, turn and brown other side. Yield: 6 servings.
