MISSISSIPPI POTATOES 
8 c. frozen shredded hash browns
1 c. mayonnaise
1 lb. American cheese, shredded or diced
1/2 c. onion, chopped
1/2 c. stuffed green olives, sliced & drained
1 lb. bacon, fried

Toss potatoes with all ingredients except bacon. Place in greased 9"x13" pan. Sprinkle crumbled bacon on top. Bake 325 degrees, uncovered, for 1 hour. The bacon can be mixed with the mixture instead of as a topping. Can also be made ahead and frozen.
