CHICKEN CACCIATORE 
1 (2 1/2 lb.) frying chicken
6 tbsp. olive oil
4 cloves garlic, minced
3/4 c. chopped onion
2 bay leaves
1 tbsp. oregano
2 c. canned tomatoes, crushed
1 lb. mushrooms
Salt
Pepper
1/2 c. sherry
1/2 tsp. thyme

Season chicken with salt and pepper. Heat oil in large heavy pot. Brown chicken with garlic and onions. Add remaining ingredients; except mushrooms. Simmer covered 20 minutes on low flame. Add mushrooms and cook an additional 10 minutes. Serves 4.
