“MOIST BANANA BREAD” IS IN:

MOIST BANANA BREAD 
1 1/2 cups sugar
1/2 cup (1 stick) butter
2 eggs
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups flour
3 large very ripe bananas, mashed
1/2 cup nuts, chopped (optional)
1 teaspoon vanilla extract

Blend together sugar, butter, and eggs. Add dry ingredients, which have been sifted together. Add mashed bananas, chopped nuts (if using), and vanilla extract. Pour into a greased loaf pan.

Bake at 375°F degrees for 1 hour.

Brush top with melted butter or glaze with confectioners icing, if desired, while loaf is still warm.

It is on the oven now & the house smells amazing :) I lost my old recipe for banana bread, so decided to give this a try! After reading so many positive reviews, how could I not try this?! I made a tiny mistake.. after I put the list in the oven, I re read the recipe & realized I forgot to add vanilla (oops) thankfully it was still batter, I just stirred it in & popped it back in the oven.. looking foward to a warm piece with my homemade butter :)

I am a snowbird, and I left my great recipe back in Wisconsin, so I'll try this one. Just so young bakers know, don't EVER throw out over-ripe bananas! Peel them, put them in a baggie, press out as much air as possible, and freeze them. When using in any banana recipe, just thaw out, measure, and use it ALL, regardless if the juice looks too brown or anything. THAT's part of the flavor you don't want to lose. Lots of people freeze them IN the peel, but that doesn't work as well.

I made this last night in a 9x9 pan since hubby wanted to try it differently. Oh my, we ate half of it! It was the best banana bread I have ever made. I've had other recipes that have a good taste but dry bread, and I must say, this is definitely MOIST! I let some of the bananas a little on the chunky side because we like actually getting a bite of banana, it was awesome! It had crispy edges and a warm, melt in your mouth inside. We cannot wait to have this again, I will have to make two batches next time so we can share. Super easy recipe, thanks!

This recipe is so yummy! I actually make this for only me, so I reduce the ingredients by half, and it still taste so delicious. I have a gas oven and the cooking time for 1/2 the ingredients was 33 minutes for me. It is very moist and tasty. Thanks for sharing this recipe!
