PINT O' PICKLES 
1/2 c. cider vinegar
1/4 c. sugar
1/2 tsp. salt
1 tsp. mixed pickling spice
2 1/2 c. sliced cucumbers
1 sm. onion, thinly sliced

Microwave vinegar, sugar, and spices on high 4 minutes, stirring once. Add cucumbers and onion. Stir to coat. Cover with plastic wrap and microwave on high 3 minutes. Stir, recover, and cook on high 1 minute longer. Let stand, covered, for 10 minutes. Spoon into jar, cover, and chill before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
