STUFFED PEPPERS | |
6 med. pepper, tops removed and seeded 1 lb. pork sausage meat 1 lg. onion, chopped (1 c.) 1 lg. clove garlic, crushed 1 1/2 c. fresh bread crumbs, fine 1/2 tsp. sage, crushed fine 2 tbsp. catsup Parboil whole pepper, five minutes; drain and halve lengthwise. In large skillet cook and stir sausage, onion, chopped garlic crushed until sausage is browned. Stir in bread crumbs, sage, and catsup. Little salt and pepper to taste. Fill pepper halves. Place in 15 x 10 1/2 inch shallow pan with enough water to cover bottom. Cover and bake in preheated 350 degree oven 20 minutes. Uncover and bake 10 minutes more or until pepper is tender. Garnish with some chopped pepper if desired. Serves 4-6. |
