CRABMEAT AU GRATIN 
1 stalk celery
1 c. onion
1/4 lb. butter
1/2 c. all-purpose flour
1 (13 oz.) can evaporated milk
2 egg yolks
1 lb. crabmeat
1/2 lb. grated Cheddar cheese
Tony's seasoning (season to your taste)

Saute onions and celery in butter until onions are wilted. Blend flour in well with this mixture. Pour in the milk gradually, stirring constantly. Add egg yolks and Tony's Seasoning. Cook for 5 minutes. Add crabmeat to this mixture and mix well. Transfer into a lightly greased casserole dish and sprinkle the grated Cheddar cheese over the top. Bake at 375 degrees for 10 to 15 minutes or until light brown.
