BASIC BEANS 
2 c. pinto beans
1 onion, finely chopped
5-10 cloves garlic, chopped
1 bay leaf
5 strips bacon
3 tbsp. olive oil
1 tomato, peeled and chopped
Salt and pepper to taste

Soak beans overnight; drain and add water to cover. Add bay leaf. Bring to a boil, then simmer for 2 hours.

Fry bacon until done--not crispy. Drain off most of the fat. Add onion, chopped tomato, chopped garlic and chopped jalapeno peppers if desired. Saute. Add 1 leaf chopped fresh coriander if available. Add to beans and serve.
