ZUCCHINI CASSEROLE 
1 sm. onion, chopped
1 tbsp. butter
2 c. cooked zucchini, mashed
2 eggs, beaten
1/2 tsp. garlic salt
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1/2 c. cheddar cheese, grated
1/4 c. sour cream

Saute onion in melted butter. Blend in zucchini. Stir in eggs, garlic salt, salt and pepper and oregano. Add 1/4 cup grated cheese and sour cream; combine well. Pour into 1 1/2 quart casserole and sprinkle with remaining 1/4 cup cheese. Bake at 350 degrees for 30 minutes.
