CARROT AND PINEAPPLE CAKE 
1 c. butter
2 c. sugar
3 eggs
3 tsp. vanilla
2 c. grated carrots
1 (13 1/2 oz.) can crushed pineapple, juice & all
1 c. chopped nuts
3 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon

Cream butter and sugar. Add eggs and vanilla. Add carrots, pineapple and nuts. Sift and add dry ingredients. Bake at 350 degrees for one hour. Makes two loaves.
