CREAMY RICE PUDDING 
1/2 c. rice
4 c. milk (1 qt.)
2/3 c. sugar (or less)
1 tsp. vanilla
1/4 tsp. salt (optional)
2 eggs, well beaten

Cook first 5 ingredients together in a pot at least 40 minutes. Gradually add hot mixture to beaten eggs until warm. Add eggs to pot and continue cooking until thickened enough to coat a spoon.
