APPLE HARVEST CAKE 
4 c. finely chopped apples
2 c. white granulated sugar
3 c. flour
2 tsp. baking soda
1 c. salad oil
2 eggs
1 tsp. salt
1 c. nuts
1 c. raisins
1 tbsp. vanilla
1 tsp. nutmeg
1 tsp. cinnamon
1/2 c. maraschino cherries

Mix apples and sugar together. Let stand 1 hour. Stir in rest of ingredients; mix well. Pour in 2 loaf pans or large tube pan. Grease pans.

Bake at 325°F for 1 hour or longer until toothpick comes out clean.
