CHILLED ZUCCHINI SOUP 
4 c. sliced unpeeled zucchini, steamed
1 med. onion, chopped
2 tbsp. butter
Salt and pepper
1/2 tsp. basil
1/2 tsp. parsley, minced
2 2/3 c. chicken broth
1 can cream of mushroom soup
3/4 c. evaporated canned skimmed milk

Saute onion, add all ingredients except skim milk. Bring to a boil and simmer 30 minutes. Then blend in blender until smooth. Add skim milk and blend. Chill.
