COCONUT-ORANGE CAKE 
1 pkg. 2-layer size white cake mix
1 c. milk
2 eggs whites
1/2 of a 6 oz. can (1/3 c.) frozen orange juice concentrate, thawed
Coconut

Combine cake mix, milk, egg whites and orange concentrate. Beat 4 minutes at medium speed of electric mixer. Fold in 1/2 cup coconut. Pour into 2 greased and floured 9 x 1 1/2 inch layer pans.

Bake in 350°F oven for 35 minutes. Cool.

Frost with Fluffy White Frosting.

FLUFFY WHITE FROSTING:

Combine:

1 cup sugar
1/3 cup water
1/4 teaspoon cream of tartar
pinch of salt

Bring to boiling, stirring until sugar dissolves. Slowly add this mixture to 2 unbeaten egg whites, beating constantly with electric mixer until stiff peaks occur - about 7 minutes. Beat in 1 teaspoon vanilla. Frost between the layers and entire cake. Sprinkle coconut over entire cake.
