ROAST BEEF 
Beef for roasting
Flour
Salt
Pepper

Pre heat oven to 500 degrees. Sprinkle roast with salt and pepper then flour. Place in roasting pan fat side up. Place in oven, keeping temperature at 500 degrees for 18-20 minutes; then reduce oven to 300 degrees and cook, basting occasionally, allowing 18-20 minutes per pound for rare meat, 22-25 minutes for medium, and 30 minutes for well done. A meat thermometer will show 140 degrees for rare, 160 degrees for medium, and 175 degrees for well done.
