LASAGNE ROLL UPS 
1 1/2 lbs. ricotta cheese
3 eggs
1 tsp. salt
1/8 tsp. pepper
1/2 tsp ground nutmeg
1/2 lb. provolone cheese (coarsely shredded 2 cups)
1 c. coarsely grated parmesan or 1/2 lb. romano cheese
1 tbsp. chopped fresh parsley
1 lb. lasagne noodles
1 1/2 lb. lasagne noodles

Prepare filling, whip ricotta cheese with electric mixer. Add eggs on at a time, beating well after each one. Add salt, pepper, nutmeg, cheese and parsley. Set filling aside.

Cook noodles in 4 to 6 qt. boiling water to which 1 Tbsp. salt has been added. After 10 to 15 minutes of cooking drain. Rinse noodles with cold water, drain. Place noodles in single layer on paper towels. To make roll-ups, spread about 1/4 cup filling on each noodles, Fold over 1 inch and continue to roll up.

Place favorite spaghetti sauce in bottom of pan. Place roll-ups (seam side down) in pan. cover with sauce and bake 30 - 45 minutes at 350.
