POTATO FILLING 
1/3 c. butter
1/4 c. onion, chopped
3/4 c. celery, chopped
1 1/2 tsp. dry parsley flakes
1/2 tsp. salt
1/8 tsp. poultry seasoning
5 c. day old soft bread cubes
1/8 tsp. pepper

Saute onion and celery in butter. Stir in the remaining above ingredients. Cook 1 large potatoes. Mash and add 1 teaspoon salt and 1 cup milk. Beat in above filling mixture. Turn into a greased 1 1/2 quart casserole. Bake uncovered in a 350 degree oven for 30 to 35 minutes or until lightly browned.
