MASHED POTATO FILLING 
olive oil
1 large onion
2 stalks celery
2 cloves garlic
dash of poultry seasoning
bag of bread filling or cubes
4 or 5 large potatoes
2 beaten eggs
milk
butter

Sauté in olive oil onion, celery, garlic and poultry seasoning. Mix with bread.

Make mashed potatoes: Beat potatoes and add eggs, milk and butter. Mix the onions, etc., with the bread cubes and mix with the potatoes.

Bake in a Dutch oven at 300°F for about 1 hour or until top is crisp.

Note: Before baking, top the mixture with lots of butter.

Serves 6 to 8 people.
