POKE SALAD 
3-4 inch shoots of Poke greens
Salt
Shortening
Eggs

Select young, tender green leaves. Wash well in cold water. Par-boil to tenderness, then drain. Season as desired with salt and shortening (fried salt pork or bacon drippings). Add 2 beaten eggs. Cook salad until eggs are done.

Serve hot.

What is pokeweed?

Pokeweed is a strongly smelling herbaceous perennial growing from four to eight feet in height. The root and berries are poisonous, but the first shoots that grow in the spring are considered to be a great delicacy. They are green to reddish purple in color and may be prepared like asparagus.

When preparing poke weed for consumption the first time, allow an experienced person to teach you what parts are safe to use and how to prepare it. If the wrong parts are eaten and pokeweed is not prepared properly, it can be Poisonous to consume! It is important to use only the thick, succulent new growth (3 to 4 inches at the growing tips). The rest of the plant contains so much Vitamin A that it may be poisonous unless it is boiled in water 3 times (the water must be discarded 3 times to leech out the excess Vitamin A.

The roots, seeds, & berries of this plant contain several toxins (including alkaloids & other chemicals). We usually use the uncolored tips of the shoots (stems darken as they mature and the leaves develope a reddish-purple tint) and blanch once (if the plant is harvested in early spring)or several times (if harvested later in the year). I do NOT recommend harvesting once the blooms start to form no matter what time of year. We usually boiled them until tender, adding some beaten eggs, and then cooked in bacon drippings (sometimes adding the crumbled bacon) until the eggs are fully set. We did the same thing with spinach. The poke may have a slightly more bitter flavor (but not so much that it is inedible) than the spinach... similar to some of the lettuces or greens as the weather gets hotter.
