SUPER EASY VEGETABLE SOUP | |
2 sm. potatoes, peeled & diced 4 carrots, scraped & sliced into round slices 1 can corned beef, crumbled 1 can tomato soup 1/2 tsp. sugar, salt & pepper to taste Enough water to cover vegetables May substitute cooked stew meat, ham or ground beef. 16 oz. (or so) of the following ingredients (1 can each) : Green lima beans Sweet peas Tomatoes (remove hard parts & chop) Cut green beans (rinse at least 3 times) Optional: V-8 is best or tomato juice if more liquid is needed. This makes a BIG pot of soup! Leftovers freeze and microwave very well. In water boil carrots and potatoes until potatoes are fork tender. Add canned ingredients using liquid from all ingredients except green beans. Bring to a boil. It's done!! |
