“SHERRY'S BLT PASTA SALAD” IS IN:

SHERRY'S BLT PASTA SALAD 
12 oz Ronzoni Smart Taste rotini
1/2 cup 1% milk
12 oz lean bacon
3 medium tomatoes, cut into chunks
1 tbsp. chopped fresh thyme
1 minced garlic clove
a pinch of kosher salt and pepper
1/2 cup light mayonnaise
1/4 cup light sour cream
4 tbsp. chopped fresh chives
5 cups mixed organic salad

Cook pasta as directed, drain.

In a large bowl, toss pasta and milk. Spray a large skillet with cooking spray, cook bacon over med-high heat until crisp. Drain on paper towels.

Discard all but 3 tablespoons of pan drippings. Add the tomatoes, thyme and garlic to pan, toss until warmed through. Season with salt and pepper. Crumble the bacon. Set aside 1/4 cup for garnish. Toss the remaining bacon into the tomato/pasta mix.

In a small bowl, mix the mayonnaise, sour cream and 3 tablespoons chives. Mix with the pasta until evenly combined. Season with salt and pepper. Garnish with the reserved bacon and remaining chives.

Serve at room temperature.
