ONE PAN MEAL 
1 lb. ground beef
1/2 chopped onion
1/2 green pepper
1/2 tsp. salt/pepper
2 tbsp. butter
5-6 med. peeled potatoes (grated)
2-3 eggs, beaten
1/3 c. milk
2 c. shredded cheese (any type)

In large frying pan, saute beef, onion, peppers. Drain fat. Put in dish. Turn to low. Put butter in pan, put potatoes in. Pan will be real thick layer. Sprinkle in salt and pepper. Top with beef then combine milk and eggs. Pour over. Cook until tender, 30 minutes. Top with cheese, cover until melted. Cut in wedges and serve.
