AUNT CARMEN'S LEMON SQUARES 
1 c. all-purpose flour
1/2 c. butter, softened
1/4 c. powdered sugar
1 c. granulated sugar
2 eggs
Juice of 1 lemon
1/2 tsp. baking powder
1/4 tsp. salt

Preheat oven to 350 degrees. Mix flour, butter and powdered sugar. Press into an ungreased baking pan (8x8x2 inches), building up 1/2 inch on edges. Poke dough with a fork to prevent bubbling of dough. Bake for 20 minutes.

Beat remaining ingredients (eggs, sugar, lemon juice, baking powder and salt) in a bowl with a fork. Pour mixture over baked dough and bake again for 25 minutes. Remove promptly from oven. Let cool for 1/2 to 1 hour before cutting into squares. Yield: 1 dozen.
