ARROZ CON POLLO (CHICKEN WITH
RICE) SPAIN
 
1 chicken
1 tbsp. salt
1/2 can capers
2 c. rice
1 green pepper
1/2 can tomato sauce
1 clove garlic
2 med. sized onions, chopped
1/2 can olives
1 c. water
1 pkg. sazon
2 tbsp. sofrito
1 tbsp. olive oil

Cut chicken into small pieces. Saute chopped garlic, salt, pepper, sazon and sofrito in olive oil. Add chopped onions. Add tomato sauce, 1/2 cup water, olives and capers. Cover and let simmer until chicken is cooked, making sure there is always a little liquid in pot. Add 1/2 cup of water and bring to a boil. Add rice, cover and let simmer until water has evaporated, then stir. Cook for 20 to 25 minutes or until rice is cooked to your preference.
