BROCCOLI BLEU CHEESE CASSEROLE 
1 or 2 oz. crumbles blue cheese, to taste
3 oz. cream cheese
2 tbsp. butter
2 tbsp. flour
1 c. milk
2 (10 oz.) pkg. chopped broccoli
1/3 c. crushed Ritz crackers

In large saucepan, blend bleu cheese, cream cheese, butter and flour. Add milk. Cool and stir until mixture bubbles. Stir in cooked, well drained, broccoli. Turn into greased casserole. Top with cracker crumbs. Bake 30 minutes at 350 degrees.
