CHICKEN DELIGHT 
2 ribs celery
2 carrots
1 sm. onion
1 sm. zucchini
1 can grapefruit with liquid
6 oz. white & wild rice with packet
2 c. water
2 chicken breasts without skin
1 tbsp. dijon mustard
1 tbsp. soy sauce
1 tbsp. marmalade

Cut up and stir together celery, carrots, onion, and zucchini. Add grapefruit, rice, and water. Put the vegetable rice mixture in a large casserole dish. Place 2 chicken breasts on top of the mixture. Combine mustard, soy sauce, and marmalade. Pour glaze over chicken. Bake, uncovered, 1 - 1 1/2 hours at 350 degrees.
