ITALIAN MEATLOAF 
1 1/2 lbs. chuck chop
3/4 c. Italian flavored bread crumbs
1 egg
1 c. spaghetti sauce or crushed Italian tomatoes
1/4 lb. procuttio
1 c. shredded Mozzarella

Mix meat, egg, bread crumbs, and 1/2 cup tomatoes or sauce until well blended. Place between 2 slices of waxed paper and roll out to 1/2 inch thick. Remove the piece of waxed paper and sprinkle 2/3 cup cheese over surface. Then cover cheese with procuttio. Roll and seal all edges. Place in baking pan. Spread 1/2 cup tomatoes or sauce overtop. Bake at 350 degrees for 45 minutes. Sprinkle remaining cheese on top and bake 15 minutes or until cheese melts. Let cool for 10-15 minutes. 1 inch slices to serve.
