BLACK - EYED PEA SALAD 
16 oz. can black eyed peas, drained
1 c. finely chopped celery
1/4 c. sweet or green onions, chopped
1/2 c. green pepper, chopped
1 med. tomato, chopped
2 c. lettuce, cut into long thin strips
1 c. coleslaw dressing

Mix all ingredients, toss lightly. Serve immediately.
