PIZZA RUSTICA | |
4 eggs 1 c. flour 1 1/4 c. milk 1 tsp. - 1 tbsp. butter 1 tomato sliced (or tomato sauce) 1/2 green pepper 1/2 onion 1/2 c. broccoli 1/2 c. cauliflower 1/2 c. Mozzarella cheese, grated 2 tbsp. Parmesan cheese 1/2 tsp. Italian seasoning Preheat oven to 425 degrees. Put butter in heavy skillet (or spray with non- stick spray) and melt in oven. Beat eggs, flour and milk together and pour into skillet. Bake for 25 minutes. Saute vegetables lightly or steam and drain (except tomato). Arrange on top of pancake 15-20 minutes into baking time. Sprinkle cheese on top and finish baking. Serve immediately. Note: Infinite variations of recipe are possible for breakfast, bake fully and add syrup or fruit and yogurt for a delightful brunch treat. |
