BROCCOLI AND RICE CASSEROLE 
1 pkg. rice (3 c. cooked)
1 stalk fresh broccoli or 2 pkg. frozen broccoli
1 big onion
1 stick butter
1 can cream of chicken soup
1 can cream of celery soup or cream of mushroom
2 c. sharp cheddar cheese
2 c. Mozzarella cheese, shredded

Cook the rice and broccoli separately. Cook the onions in the butter. Cook the soup; pour the broccoli in the pan and cut it up in fine pieces. Add rice. Season with salt and pepper; add the onions and mix.
