CRAB AU GRATIN 
4 tbsp. butter
1/3 c. flour
1/2 tsp. grated lemon peel
1/4 tsp. dry mustard
Dash white pepper
1 slightly beaten egg
2 c. light cream
3 1/4 lbs. crab (2 1/2 c. meat)
3 tbsp. sliced green onion
2 tbsp. butter
1 c. soft bread crumbs
1/2 c. shredded Swiss cheese
1/4 c. sliced almonds, toasted

Melt 4 tablespoons butter in pan and add flour, lemon peel, dry mustard and pepper. Stir in egg and light cream until thickened; do not boil. Add crab and onion and pour into 4 individual casseroles. Bake at 350 degrees for 15 minutes. Combine 2 tablespoons butter, bread crumbs, cheese and almonds. Sprinkle around edge of casseroles and bake 5 minutes more or until cheese melts.
