3 egg whites
1 c. sugar
1/2 tsp. baking powder
11 graham crackers, rolled fine
1 c. chopped pecans
1 tsp. vanilla
1/2 pt. whipping cream

Beat egg whites until stiff with sugar and baking powder. Fold in graham crackers, pecans and vanilla. Pour into a pie pan that has been sprayed with vegetable spray. Bake in a preheated 350 degree oven 30 to 35 minutes. Cool thoroughly. Meanwhile whip cream, sweeten if desired, spread over cooled cake and chill at least 4 hours before serving.

Serves 6 to 8.
