NEVER FAIL CHOCOLATE CHIP
FROSTING
 
1/4 cup (1/2 stick) butter
1/4 cup milk
1 cup powdered sugar
1/2 cup chocolate chips
1 tsp. vanilla

Bring butter, milk and sugar to a boil, add chocolate chips and vanilla. Beat until cool.

This will frost a 9x13-inch cake.

Made a chocolate devils food cake & looked online for a quick & easy buttercream frosting to make... I had no cocoa powder in the house but did have chocolate chips. This was great, but you have to make sure the butter/sugar/milk is boiled until the sugar granules dissolve... takes a while. I whipped the frosting until it cooled and was afraid it wouldn't firm up. The more I let it cool, the better it became. Once the cake was cooled, I re-whipped the frosting and it was delicious!! Added some coconut extract to the frosting, as well as some coconut & crushed almonds to the top after frosting!! who needs dinner when you can have cakeC?!!

It was good and fudge-like. Next time I will increase the recipe, it didn't make quite enough for a 9 x 13 cake.

If using regular sugar, the sugar can crystalize causing hard spots. To avoid that add 1-2 tablespoon of light corn syrup which will stop sugar from crystalizing. If you want perfection every time use 10x sugar!!!

Best homemade icing, easy too but I also added 1 heaping big spoon of peanut butter. Yummy! Tasted heavenly!

I can bake breads, every time I try cakes or cupcakes something seems to go wrong. But I was able to bake a cake using an old recipe of my mom's and this was the perfect icing for it! Quick and easy and I had everything on hand.
