PECAN MUFFINS 
2 c. white flour
3 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
1 egg, slightly beaten
1 c. milk
1/2 c. melted butter
1/2 c. chopped pecans
Cinnamon, sugar, and more chopped pecans

Preheat oven to 375 degrees. Butter muffin pans. Mix flour, baking powder, salt, and sugar in large bowl. Add the egg, milk, and butter, stirring only enough to dampen the flour. Fold in 1/2 cup chopped pecans. Spoon into muffin cups and sprinkle with cinnamon, sugar and additional pecans. Bake for about 20 to 25 minutes.
