PUMPKIN CHEESECAKE 
2 c. vanilla wafers (or ginger snaps)
1/4 c. butter, melted
16 oz. cream cheese, softened
3/4 c. sugar
1 tsp. vanilla
3 eggs
1 c. pumpkin
3/4 tsp. cinnamon
1/4 tsp. nutmeg

Crush cookies into crumbs. Combine crumbs with butter and spread into springform pan. Combine cream cheese, 1/2 cup sugar and vanilla. Mix at high speed until well mixed. Add eggs one at a time, mixing well after each. Reserve 1 cup of mixture.

Add pumpkin, sugar and spices to remaining cheese mixture. Mix well. Layer half of pumpkin mixture and half of cream cheese mixture over crust and repeat. Cut into batter for marble effect. Bake at 350 degrees for 55 minutes. Loosen and cool before removing.
