CHOCOLATE CHIP COOKIES 
1 1/2 sticks butter (12 tablespoons), room temperature
1 cup light brown sugar, firmly packed
1/2 cup white granulated sugar
2 eggs, lightly beaten
2 1/4 cups sifted flour
1/2 tsp. salt
1 tsp. baking soda
1 1/2 tsp. pure vanilla extract
1 cup nuts, chopped
1/2 cup golden raisins, soaked in hot water (optional)
1 cup semi-sweet morsels

Preheat oven to 375°F.

Remove butter from refrigerator before baking; butter should be somewhat soft, still slightly cold and not melting.

In a mixing bowl, cream together butter and sugars. Add eggs.

Sift flour and measure out 2 1/4 cups. After measuring the sifted flour, sift again with remaining dry ingredients. Add the flour mixture to the creamed butter and sugar mixture.

Stir in vanilla, nuts and semi-sweet morsels. (We like Macadamia nuts and almonds, but walnuts, pecans or peanuts may be used). Add raisins, if using. Craisins make a nice variation.

Drop the cookie batter by tablespoonfuls onto a parchment or silicone lined baking sheet.

Bake for 10-12 minutes or until cookies are set and firm and only lightly colored. Do not allow cookies to brown.

Transfer to wire racks to cool. Store in an airtight container. Cookies may be wrapped well and frozen.

I haven't tried the recipe yet. I was wondering if anyone had any idea how to make this recipe sugar free? My dad is diabetic and I am having a hard time trying to make Christmas cookies for him.

I gave this recipe a 3 because when I cooked the cookies they were nice and fluffy and then I took them off the pan and they were really flat. I'm going to try and put the dough in the fridge for a couple hours and see if that helps. I like thicker cookies so I was a little disappointed.

These cookies are amazing! I had to try it with more chocolate chips, on the bottom rack at a slightly lower temperature, the chocolate melted so nicely into the cookies! If you like big, chocolatey cookies, double the recipe and triple the chocolate chips!

Well I made these cookies and the turned out amazing. I loved them, so did my family. I changed it up a bit I used pecan chips instead of almonds.

This is THE best choc chip cookie recipe i've ever found. I love it because they're so soffft and delicious, and it doesn't call for an entire package of choc chips - I just used some leftover mini choc chips I had laying around. These don't even taste home made that's how preciously divine they are. I think they sifted flour makes all the difference. Thank you so much CM!!!

One thing I have to add to this recipe: MAKE SURE YOU MELT THE BUTTER! I didn't melt the butter before mixing everything and I ended up with a powdery mess. That's okay though, just make sure you mix it very well. Came out great!
