1 1/4 lbs. ground beef 1/2 c. chopped onion 12 oz. can whole kernel corn with red & green sweet pepper, drained 8 oz. jar Cheez Whiz 4 oz. can chopped green chilies 3/4 c. cornmeal 3/4 c. flour 2 tsp. baking powder 2/3 c. milk 1/4 c. butter 1 egg Brown meat in 10" oven proof skillet; drain. Add onion; cook until tender. Stir in corn, 1/2 cup Cheez Whiz and chilies. Combine dry ingredients. Add combined milk, butter and egg, mixing just until moistened. Stir in remaining Cheez Whiz. Spread over meat mixture. Bake at 400 degrees for 25 to 30 minutes or until golden brown. Let stand 5 minutes before serving. 6 servings. MICROWAVE: Crumble meat in 1 1/2 quart casserole; add onion. microwave on High 5 to 6 minutes or until meat loses pink color when stirred; drain. Stir in corn, 1/2 cup Cheez Whiz and chilies. Microwave 1 to 2 minutes or until hot, stirring after 1 minute. Prepare cornmeal mixture as directed; spread over meat mixture. Microwave on medium (50%) 10 minutes, turning dish every 3 minutes. Microwave High 4 to 5 minutes or until wooden pick inserted in cornbread comes out clean. |
