RAVIOLI WITH CREAM SAUCE 
1 pkg. cheese ravioli (your favorite)
3 tbsp. olive oil
1 tbsp. butter
1 small onion, chopped
4 oz. diced cooked ham
1 tbsp. all-purpose flour
1/2 cup chicken broth
salt and pepper, to taste
1/2 cup whipping cream
1/2 cup white wine
pinch of nutmeg
4 tbsp. grated Romano cheese
chopped parsley

In a large pan, heat oil and butter. Sauté onion and ham. Stir in the flour and add remaining ingredients except the cheese and parsley. Simmer for 8 to 10 minutes over medium heat.

Cook ravioli according to package directions, drain. Toss with the sauce, cheese and parsley.

This sauce was the best part of the meal. Truly fine restaurant quality. Outstanding flavor, very creaming and satisfying over even mediocre ravioli.

I made three minor adjustments:

1) Instead of adding common diced ham as it cooks, I laced one inch-wide strips of prosciutto over the top of the ravioli before serving.
2) I spooned the sauce over the top--it's so rich, it's easier to regulate the amount.
3) I sprinkled the grated Romano last, adding visual texture to finish the dish.
