SWEET PICKLE CHUNKS 
10 med. cucumbers
8 c. sugar
2 tbsp. mixed pickling spices
4 tsp. salt
4 c. vinegar

Cover whole cucumbers with boiling water; let stand overnight. Drain. Repeat for 3 more days. On fifth day, drain and cut into bite size chunks. Combine remaining ingredients, bring to a boil and pour over cucumber chunks. Cover and let stand for 2 days. Then bring mixture to full boil, fill hot jars 1/2" of top.

Adjust lids, process in hot water bath for 5 minutes. Start timing as soon as jars are placed in water. Makes 9 pints.
