FRIED MACARONI 
1 packet macaroni
1 c. minced beef
1 c. oil or enough for frying
1 sm. can tomato paste or puree
1 lg. onion, diced
3 cloves garlic, crushed
1 inch fresh ginger, crushed or 1/2 tsp. ginger powder (optional)
1 tsp. cumin powder
Salt to taste
2 stalks spring onion, sliced
3 hard boiled eggs, sliced

Cook macaroni in hot boiling salted water. Drain and rinse in cold water; put aside. Heat oil in a large frying pan or wok. Stir in diced onion, garlic and ginger for about 10 minutes. Add in the minced beef and stir for further 10 minutes.

Add in tomato paste or puree and cumin powder. Stir fry ingredients on a moderate heat for about 20 minutes or until meat is done. Add in cooked macaroni. Mix all ingredients well and cook for further 15 minutes. Serve on a long or round platter and garnish with sliced spring onion and hard boiled eggs.
