LITE PIE IN A HURRY 
1 pkg. (3 oz.) Jello - strawberry
2/3 c. boiling water
2 c. ice cubes
8 oz. Cool Whip
1 c. diced strawberries
9 inch graham cracker crust

Save 3 strawberries for garnish - 1/2 strawberry for each wedge of pie.

Completely dissolve gelatin in boiling water, stirring about 3 minutes. Add ice cubes and sir constantly until gelatin is thickened, about 2 to 3 minutes. Remove any unmelted ice. Using a wire whip, blend in whipped topping, then whip until smooth. Fold in fruit. Spoon into pie crust - add garnish and use plastic inset from crust inverted to cover pie with. Chill 2 hours and serve. Makes 6 servings of light dessert.
