CHICKEN AND BROWN RICE TOSS 
3 c. cooked brown rice
12 oz. cooked chicken (2 c.)
1/2 c. sliced celery
1/4 c. sliced pitted ripe olives
2 tbsp. sliced green onion
1/2 c. mayonnaise
1/4 c. Italian dressing
1/2 c. coarsely chopped cashew nuts
Lettuce

In mixing bowl combine cooked brown rice, chicken, celery, olives and green onion. Stir together mayonnaise and Italian dressing; add to chicken mixture. Toss gently to coat. Cover and chill. Just before serving, add cashews and toss again. Turn into lettuce lined salad bowl. Makes 4 to 5 servings.
