CHEWY OATMEAL COOKIES 
2 sticks butter (no substitute!)
1 c. sugar
1/2 c. brown sugar, packed
2 eggs
1 tsp. vanilla
1 1/3 c. flour, unsifted
1 tsp. baking soda
1/2 tsp. salt
2 c. quick-cooking oats
1 c. chopped pecans
1 c. chocolate chips

Cream together the butter and sugars. Beat in the 2 eggs. Add vanilla. Gradually add the dry ingredients. Blend in the nuts and chocolate chips. Bake on a Pam-sprayed cookie sheet in a 375 degree oven for 10 to 12 minutes.
