CABBAGE AND SHELLS | |
1 head savoy or green cabbage (about 1 1/2 lb.) 1 med. sized onion 1/2 c. olive or salad oil 1/4 tsp. crushed red pepper 1/4 tsp. coarsely ground black pepper Salt 1 (16 oz.) pkg. lg. shell macaroni 1 tbsp. chopped parsley Parsley sprigs for garnish About 45 minutes before serving: Coarsely slice cabbage. Chop onion. In 12 inch skillet over medium high heat. In hot olive oil or salad oil, cook cabbage, onion, crushed red pepper, black pepper and 1 1/2 teaspoons salt until cabbage and onion are very tender, about 20 minutes, stirring occasionally. Meanwhile, prepare shell macaroni as label directs, using 1 tablespoon salt in water. To serve, drain shells; add to cabbage mixture. Stir in chopped parsley and sprigs. Makes 4 main dish or 8 accompaniment servings. |
