POPOVER TACOS | |
1 lb. ground beef 1 lg. onion, chopped 1 taco mix 1 can tomato sauce 1/2 c. water 1 can refried beans 1 can (4 oz.) chopped green chilies 1 c. grated Monterey Jack cheese 1 c. milk 2 eggs 1 tbsp. oil 1 c. flour Cook beef and onion; drain. Stir in taco seasoning mix, tomato sauce and water. Simmer 10 minutes. Spread beans into greased 9 x 13 x 2 pan. Layer 1/2 the chilies over the beans. Pour meat mixture slowly over chilies. Layer the remaining chilies. Top with cheese. Blend eggs, milk, oil and flour and pour evenly over pan. Bake at 400 degrees for 30 minutes or until brown. Cut into squares. Serves 6 to 8. |
