PARMESAN POPOVERS 
2 eggs, slightly beaten
1 c. all purpose flour
1/4 tsp. salt
1 c. milk
1/4 c. grated Parmesan cheese

Combine all ingredients; beat at low speed of electric mixer until blended. Place well greased muffin pans in 425 degree oven for 3 minutes or until a drop of water sizzles when dropped in them. Remove pans from oven; fill each muffin cup 3/4 full with batter. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees, and bake an additional 20 minutes or until popovers are firm. Serve immediately. Yield: 1 dozen.
